Made from raw cow's milk, this firm, smooth cheese is aged for 24 months. As this cheese ages it transforms from supple to dense and firm with a nutty, smoky and sweet flavour.
Pair with Jura wines or Chardonnay, Chenin Blanc, or Viognier.
