Presented under a blue wax, this cheese is matured for 7 months. It has a pale yellow color reminiscent of butter, with a slightly crumbly texture and a sweet smell. Reminiscent of Dutch Gouda with hints of salted surgar. Serve with a fig or fruit chutney and a glass of beer.
