The Canotier de l'Isle is an artisanal, surface-ripened firm cheese from the Fromagerie de l'Île-aux-Grues, made using unpasteurized cow's milk and aged for 12 to 18 months. Its Origin is Quebec, Canada (specifically Chaudière-Appalaches). Inspired by an ancestral recipe from the early 1900s, it has a fine, ochre-tinted washed rind and an ivory paste. The flavor profile is complex, dominated by rich, creamy notes and a very distinct taste of hazelnut, complemented by pleasant fruity undertones. Per 100 g, it contains 30% fat content (Matières grasses) and 38% moisture (Humidité).
