Its Origin is Quebec, Canada (specifically Estrie), named after an old stagecoach road where the farm and creamery are located. This longer aging process gives it a more pronounced flavor and a beautiful length on the palate, enhancing the natural floral and fruity notes of its predecessor, while the rind develops delicious woody aromas.
