The texture is a firm camembert like cheese. The flavor is Much like OKA from Canada. In fact Oka was started by Benedictine monks in Quebec. Chimay is made by Benedictines in Belgium dating back to the 1300s. Coincidence? They mention the flavor is like toasty hops. They also make the famous Chimay beer. Highly recommended!
