Houde le Patriarche is a refined, soft-paste, washed-rind cheese from the Fromagerie Nouvelle France, inspired by the French Maroilles. It is made using pasteurized cow's milk and aged for 4 weeks. Its Origin is Quebec, Canada (specifically Estrie), and its name pays tribute to Louis Houde, an ancestor of the Houde family in America who arrived in New France in 1642. This cheese is characterized by its orangey washed rind and a buttery, melting, ivory-colored paste. The taste is a complex mix of farmstead aromas, melted butter, and fruit, with notes of roasted onions.

Per 100 g, it contains 26% fat content (Matières grasses) and 51% moisture (Humidité).
