Pronounced "la-yull) it is named after a village in the Aveyron in France. A pressed, uncooked firm cheese made from raw, cow's milk. Fresh lactic aroma with buttery flavour.  Traditionally a dessert cheese it can shine anywhere! Enjoy it in the Pommes Aligot (cheesy potatoes) recipe.

 

Pair with a fruity red wine from Vallee du Rhone or a Chenin Blanc.
