The Raclette de Compton à la fleur d’ail (Garlic Scape Raclette) is a farmhouse, semi-firm cheese from the Fromagerie La Station de Compton, made using unpasteurized organic cow's milk and aged for 60 to 90 days. Its Origin is Quebec, Canada (specifically Estrie). Created in collaboration with a local organic garlic producer, this cheese has a beautiful copper rind and a semi-firm paste studded with garlic scapes. When heated (as in raclette), it delicately releases its fruity and lactic aromas.
Per 100 g, it contains 30% fat content (Matières grasses) and 44% moisture (Humidité).
