Qu�bec's version of Saint-Paulin is a semi-soft, pressed cheese with a smooth, supple texture. Made from pasteurized cow's milk, its paste is a creamy to pale yellow, while its edible rind has a distinctive orange color.

This cheese offers a mild, buttery flavor with subtle notes of fresh milk and yogurt, and a slightly acidic, nutty finish. It is often described as having a delicate, inviting aroma.
