Favuzzi Sicilian-style sauce is a thick, rustic blend of crushed yellow and red bell peppers and tomatoes, enhanced with chopped onion and eggplant. Its rich, Mediterranean flavor recalls both ratatouille and traditional caponata.
This versatile sauce is the ideal companion to Sicilian arancini and can easily be transformed into a classic Sicilian ragù by adding ground meat and green peas—perfect for lasagna or cannelloni. It also pairs beautifully with chicken dishes, such as a Basque-style preparation. For pasta, use approximately 375 mL (1 cup) of sauce for 500 g (1 lb) of pasta. To elevate the texture and flavor, reserve some pasta cooking water and mix ¼ to ½ cup (or a ladleful) into the sauce before combining with the pasta. The salted, starchy water helps thicken the sauce and ensures it clings perfectly.
