An artisanally produced cheese,  it is made with thermalized cow's milk.  An initial 6 month maturation is followed by an additional aging to incorporate the flowers into th rind. 

Tender to firm, it has a slightly salty, nutty flavour.  Intense aromas and complex flavors.  


Pair with a Chardonnay
