Made with slow-cooked, melt-in-your-mouth tomatoes, Favuzzi Tuscan-style sauce is delicately accented with caramelized red pepper and a touch of garlic. Often considered the most classic of Italian sauces, its balanced aromatic notes highlight the pure, fresh taste of ripe tomatoes in perfect harmony.
A staple for all pasta dishes, this versatile sauce also serves as the base for pappa al pomodoro, the traditional Tuscan bread soup, equally delicious served hot, cold, or at room temperature. For pasta, use approximately 375 mL (1½ cups) of sauce for 500 g (1 lb) of pasta. To achieve an authentic Italian texture, reserve some pasta cooking water and mix ¼ to ½ cup (or a ladleful) into the sauce before adding the pasta. The salted, starchy water enhances flavor, thickens the sauce, and helps it cling beautifully to the pasta.
